Why was the sun important to the aztecs?

Same reason it is important in every other religion. It is seen as being eternal, everlasting. Metaphorically, no matter how much the darkness (evil) tries to drown out the light (good) of the sun, the sun will always rise the next day (ie good will always triumph).
